As concentration rises, salt crystals form.

Coarse crystals are gathered, dried and prepared.

Why coarse crystals?

Coarse salt is useful when texture, control and slower dissolution matter. Leave crystals whole, crush them between your fingers or use a grinder.

For brining, always measure by weight when precision matters; crystal size changes how much salt fits into a spoon.
